Healthy M&M Cookies
My husband adores cookies. Well more like chocolate chip cookies, but he also loves my adaption to the M&M’s cookie recipe. Given this cookie isn’t 100% sugar free since I’ve never came across a sugar free M&M bag ever, but I think these come pretty close to it anyway. Of course after reading the original recipe itself I cringed with how much butter was in it, I know one full cup isn’t a lot, but I don’t like the high fat content itself.

And I love the stress relief I get from coming up with new ways to make things.
I messed around with the recipe a few times until I found the perfect combination that was fairly healthy, not packed full of sugar, and not packed with unhealthy fats. I can’t say this method is for everyone, but both my husband and my son love it. I also shared them with some family down in Idaho, and they were a hit with them too. So they must not be that horrible right!?
Turn the oven on to 350 degrees. In a large bowl what you want to do is add in the softened butter, oil, and both sugar’s (sugar substitute, I used Truvia), mix together until well blended.
Throw in the egg, and vanilla and mix to combine.
Add in the flour, baking soda, and salt then mix until combined. It should look like something below.
Add in the M&M’s of your choosing (I’ve made mine with the peanut butter ones), then stir it all together until the M&M’s are mixed evenly throughout the dough.
Shape the dough into small balls and place onto an ungreased baking sheet. I discovered with the oil you don’t have to worry about spraying the bottom. If you do the cookies on the bottom tend to have an over baked and slightly hard bottom. Also your hands may get a little oily but it’s well worth it.
Cook for 9 to 10 minutes for a nice soft cookie that stays soft, even days later.
½ cup of gold n’ soft butter (1 stick) (you can also use a butter substitute in place of this)
¼ cup of Olive Oil
1 tsp of Coconut Oil
2/3 cup of truvia brown sugar baking blend
2/3 cup of truvia sugar (or your choice of sugar substitute)
2 tsp of Vanilla extract
2 cups of Almond Flour (you can use normal white flour if you wish. I’ve made it both ways and they come out tasting just as good)
1 ¼ tsp Baking soda
1 tsp salt
1 ¾ cups of M&M’s of your choice.

- Cook for 9 to 10 minutes
